I love to cook, so every week I will post a new recipe on the page.

Pumkin Pancakes

2 C. Flour
4tsp. baking powder
1tsp. cinnamon
1/2 tsp. nutmeg
-----Sift together in bowl and set aside
1/4 tsp. ground allspice
3/4 C. sugar
1&1/2 C. pumpkin
3 eggs
1 C. Buttermilk
3/4 C. Veg. oil
1 tsp. vanilla
------mix together in bowl until well blended
Now combine the two mixtures. For a lighter pancake fold ingredients together until just blended. For heavier more dense pancakes (closer to a pumpkin pie texture) blend or beat together until thoroughly mixed. If you like you may add nuts (pecans)These pancakes take twice as long as regular pancakes do to bake. Be patient and you may need to adjust the heat. I hope you enjoy!
